Beer
The base for this gose is a pilsner/wheat wort, lightly hopped and salted mixed ferment (lacto, sach, brett) pale sour ale. Aged for several months on blueberries and second use black boy peaches. Finished with black limes (dehydrated limes). Light funk, med-high acidity, dry finish, candied citrus. Bottle Conditioned.

Please note: These barrel aged styles of beer are more similar to wine in the sense that they develop more with age, also as they are bottle conditioned there is yeast still working away in the beer itself which also develops the beers flavour over time

A tasting blend from three different barrels, including a two year old spontaneous barrel, a two year old wild ale barrel (turbid mash, aged hops, coolship, fermented with a mixed culture and an 18 month old mixed ferment barrel (pils/wheat, young hops, no coolship, mixed culture). The alcohol content is 6.3% ABV.
Triple oak barrel aged saison.
This beer started out as an experiment to see what would happen if you aged a regular strength pale beer in fairly expressive oak barrels. Fermented out with a saison yeast in primary this beer then spent 4 months in an American oak (4 Roses Bourbon) barrel before we racked it into a French oak barrel (ex pinot) for another 14 months.
Finally we dry hopped the beer with HBC-472 - an experimental hop variety that has oak/bourbon/vanilla notes.

This beer started out as two seperate barrels that we filled in 2018. Three years later we blended the two barrels together before separating the blend out into two different finishing barrels. This part of the blend was finished in an american oak barrel with 250g/L blueberries and raspberries.

Gunnamatta utilises judicious amounts of Earl Grey Blue Flower tea to generate an intoxicating floral and citrus aroma with the quenching dry finish of an ice tea. A truly unique new world India Pale Ale with a decidedly old world twist.
