What we have here is a passion project, many years in the making.
We wanted to put our own, beer-inspired mark on our whisky. So instead of making a wash from pale distillers malt, we started with what can best be described as a porter. Dark, chocolatey and malty, fermented with a Belgian saison yeast. After distilling this twice, we aged it in three different barrels:
First it spent a year in barrels that held our famed Imperial Stout, Bumaye.
Then it went into brand new, heavily charred American Oak barrels for two years.
Finally it spent three more years in Bourbon barrels that also held another Imperial Stout.
The finished result is a whisky that is rich and complex. Full of sweet, chocolatey notes from the barley and the stout barrels, layered with complex alcohols, esters and phenols from the fermentation and distilling. This is all rounded off by vanilla, coconut and caramel flavours from the oak.
56% ABV.
An exquisite trinity of three hand-selected casks, drawn from some of our oldest stocks and reduced to 52% abv. This 700ml bottle comes in a beautiful oak frame.

Toffee and milk chocolate, oak/wood and soft floral undertones on the nose
Oak, dark caramel, dark cocoa, new leather, creamy tannin, floral and anise on the palate

Introducing Allier. A celebration of NZ single malt whisky and one of the most important French Oak forests: Allier.
This whisky is made from unsmoked New Zealand grown malted barley and has been matured in a second fill wine cask from the Allier forest, central France. Initial grape notes from the wine have been pulled off in the first fill. What?s left, and what has been imparted is beautifully smooth, balanced, and compliments the malty NZ whisky.
The bottling is giving generous notes of pain aux raisin, dark chocolate, custard, hazelnut.

This limited edition Walkman flask contains Thomson Two Tone blended whisky.
Two Tone refers to the two kinds of cask used for the maturation of this whisky; European oak which formerly held New Zealand red wine and American white oak used exclusively for whisky.
Find sea air and caramelised fruits on the nose, followed by red berries, apricot and spice on the palate. In place of an age statement the infinity symbol marking this bottling is symbolic of the marriage of casks.

Just in time for Christmas! People have been asking for a cask strength Manuka Smoke bottling for ages… and now it's here. It's called Full Noise, denoting the cask strength abv, and the deeper, more abundant smoke notes. This is a big limited edition, cask strength, single malt.
Cask: American oak ex Bourbon.
Malt: 100% NZ grown, Manuka smoked.
Dyad is our wine barrel finish range. This release distilled in 2015 is made from unpeated New Zealand malt. Double distilled in copper pot stills and firstly matured in a refill bourbon barrel, before being finished in a French oak ex Chardonnay barrel from our friends at Mudbrick Vineyard on Waiheke Island. A rich and inviting nose leads to a complex palate with some umami character. An oily mouthfeel, well balanced with both sugar and lemon notes. A long finish with hints of a nutty, yeasty character from the Chardonnay.
