Burgundy
One of the greatest domaines in Chablis. Founded by William Fevre in 1957, its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.

Domaine William Fevre has led the Chablis revival over the past decade with its refined, full bodied, dry white wines, all 100% Chardonnay, of course, as this appellation is devoted entirely and solely to this great white grape variety.
Bougros sits on a very steep slope, with a gradient of more than 30%, facing due south at the foot of the hill. The shallow soil, a mixture of clay and gravel, prevents excessive yields resulting in complex, robust wines.
This wine is 100% Chardonnay grown on clay and gravel on a small 2.11 hectare plot.
Use of the principle of gravity so as to avoid all pumping, which could harm the quality of the wine. Brief (1? - 2 hours) pneumatic pressing to obtain a gentle separation of the solid and liquid parts of the grape. Very light static settling of the juice to preserve enough fine lees so that the alcoholic and malolactic fermentations can occur naturally. The must is run into French oak barrels (aged of 6 years in average) for 50 to 60% of the wine. The remainder is
vinified in small stainless steel vats.
It was aged for 14 to 15 months, of which five to six months on fine lees in French oak barrels, for 50% to 60% of the wine. The end of maturation occurs in small stainless steel vats.

Chateau Thivin is the oldest estate on Mont Brouilly, which has remained in family hands for several generations. Grown on steep slopes, harvested manually and vinified using low intervention techniques so as to maximise terroir expression.
The Brouilly appellation is capable of producing excellent and complex wines, quite unlike the maligned Beaujolais Nouveau. Brouilly produces fruit forward, medium bodied wines, typically from the Gamay grape.
Le Sept Vignes is a blend of the seven plots of Chateau Thivin, in an effort to represent the region's terroir. This is a delicious, medium bodied red, with slight tannins and a persistent, juicy red-fruit character. Complex yet easy-drinking in it's youth. This wine will grow in elegance given a few years age.

Michel Lafarge was one of the greatest winemakers in modern Burgundy and he forged a reputation for making outstanding quality wines from Volnay, including top of the line Pinot Noirs from the Burgundy region (also known as Bourgogne).
This fleshy, fruit forward wine is a great example of Pinot Noir from Burgundy with character and regional flavours of earthy, spicy notes and a tart cherry acidity adding drive and nerve to the wine.
Lafarge passed away in January 2020 at the age of 91. His passing was marked by an outpouring of respect from all over the wine world. The domaine, now run by his son Fr?d?ric and granddaughter Clothilde, is rightly hailed as one of the finest estates in Volnay. The domaine is farmed biodynamically, using eco-friendly resources including a band of travelling chickens to eat vineyard pests and a horse to plough between their 10 hectares of vines. The vineyards are planted on some of the best sites in Volnay and Beaune and their winemaking is sensitive but traditional, with just a small amount of new oak used to allow the wines? finesse to shine through. Today, Michel Lafarge? son, Fr?deric, runs the around 10 hectares of vines and own some of the very best sites in Volnay. The domaine is run very much by instinct and respect for the terroir, with no sense of imposition and with biodynamic techniques.
The lieu-dit "Les Gr?ves" references its gravelly terroir, and the name could be considered a derivation of "graves", as used in for the gravelly soils in Bordeaux. This rather large cru (covering approximately 20 hectares) is found in the heart of the slope and considered one of the best of the Beaune Premier Crus.
The vines, planted on lightweight clay and limestone soil enjoy optimal sun exposure. The Beaune Premier Cru "Les Gr?ves" is an extraordinary wine with rare finesse.
Domaine Denis Race is a small, family run winery in Chablis. This Chardonnay uses no oak, resulting in a focused and linear wine. Steel ageing results in a very pure expression of terroir. The nose is fresh and mineral, with grassy and citrus notes. On the palate there is a textural richness, which is balanced by citrussy acidity and savoury minerality.

The Style of the Wine
With its well-defined character, this wine perfectly illustrates the identity of the Nuits Saint Georges vineyard. Complex aromas of blackcurrant mingled with spicy blackberry are revealed on the nose with, depending on the vintage, darker notes of liquorice, leather and blood orange. The well-built mouth affirms itself with density and strength around a tight structure with rich, well-wrapped tannins. It becomes increasingly seductive over time, which comes from the elegance, intensity and purity of the fruit.

- The Clos des Forêts Saint Georges covers the entire geological range of the slopes of Nuits Saint Georges: Ladoix limestone at the bottom, Premeaux limestone in the middle, and white oolite limestone in the upper part, with a marked presence of ochre silt in some places. This Clos is planted entirely to Pinot Noir.
- Traditional vinification: A manual harvest, minimal vatting, pumping over and punching down without excess to reveal the full aromatic range drawn from this great terroir. Ageing lasts on average 15 months in oak barrels, with a maximum of 40% of new barrels, and 3 months in vats before bottling.
- A wine for ageing: the generous terroir of the Clos des Forêts Saint Georges forms the soul of the wine. It builds a solid red around well-present tannins which define a wine for ageing. The Terroir
In Burgundy the monopoly (single estate vineyard) defines a unit of land, a terroir which has been perfectly defined for centuries and which is owned by a single proprietor. The Clos des Forêts Saint Georges covers a surface of 7.2 hectares, all in one piece. It is a unique terroir in a privileged location which right from its origin has made one of the greatest Nuits Saint Georges wines.
Tasting Note
The nose brings out deep, intense floral and fruity notes, mixed with hints of spice. Described as a more muscular wine, the palate is straightforward yet complex, elegant and full-bodied. The finish is long and intense, suggesting that it will keep well. This is a very fine wine with velvety tannins.
This Pouilly-Fuiss? is a blend of two parcels from the town of Vergisson, respected as one of the most mineral wine producing villages of the appellation. One parcel is north facing, with cooler breezes, while the other is a late ripening plot facing east on sandstone soil; the vines are between 35-60 years old. This combination results in a superb tension between mineral and fruit, with great depth and concentration.
Macon is the southernmost terroir in the Bourgogne wine region. The warmer Southern climate produces richer, fruitier Chardonnay's in comparison to the wider region. The M?connais white wines are floral and fruity on the nose and rich and well structured, but with good acidity.
This Chardonnay is made to be drunk young. The nose shows floral aromas and a distinct freshness. On the palate, the wine is vibrant and fruity with balanced acidity. This is an extremely food friendly and versatile wine.
