Chardonnay
This is an outstanding new addition to the much loved Esk Valley stable and it successfully straddles the big buttery Chardonnay style with all the subtleties that wine fans adore about the Chardonnay grape too - namely, its crisp, freshness.
It is part of the new Esk Valley Artisanal Collection wines, which were launched this year and this one is made from clone 95 vines in Hawke’s Bay. The grapes were fermented in French oak with wild yeasts, which gives this wine its rich and nutty flavours, its seductive savoury notes and its full body.
The finished wine went through 50% malolactic fermentation with lees stirring to accentuate and lift the big flavours in this big wine.
Full bodied, creamy and toasty with flavours of oatmeal, spice and fresh macadamias. This big white has all the bells and whistles and is made with grapes grown on the coast at Bay View north of Napier. All grapes were hand picked, fermented with wild yeasts in French oak, which softens the edgy acidity, adding notes of spice, cedar and hints of oak, all of which provide weight, making this wine super rich and flavoursome. It suits roast chicken or spaghetti carbonara; vegetarian or with a little meat but either way, served with a squeeze of fresh lemon, olive oil, pepper and parmesan.

This vineyard produces grapes with a broad fruit expression which makes dry full bodied wines in an extremely commanding style. The wine spends 16 months in barrel and gains massive textural qualities from this long aging time, pre bottling.
It's a great white from the world's southernmost wine region. Drinks well now and can age.

The grapes were fermented in a combination of new and old oak barriques and given 10 months ageing in oak prior to bottling.
100% hand-picked Chardonnay, crushed and pressed into old Burgundian French oak barrels for wild yeast fermentation until dry. The wine was matured in barrel for 14-16 months during which time it underwent full malolactic fermentation.
This is a complex Chardonnay with multiple layers of ripe fruit and richness, along with a chalky minerality on the nose. Chardonnay is Australia's most planted and most popular white and grapes from five single vineyard sites in Healesville were whole bunch pressed to 675 litre open top clay egg fermentation vessels to make this wine. Indigenous yeasts were used and the lids were sealed with clay at the completion of fermentation. Each egg was then decanted to chill before being racked once more and bottled by gravity. No fining and no filtration add to the great purity of fruit in this dry, full bodied, exceptionally elegant Australian Chardonnay, which deserves to become known as one of the great whites from our nearest neighbour, across The Tasman.
Clayvin Chardonnay is one of the great Chardonnays from Marlborough. Full bodied from ageing on lees in 1,000 litre German Fuder barrels, which provides the wine with complex nutty and fresh bread aromas which marry beautifully with stonefruit flavours, subtle nuttiness and honeyed aromas. Lively acid is balanced with distinct minerality and citrus flavours on the palate.

Citrusy, fresh, creamy and medium bodied. This wine is a superb Chardonnay from Marlborough, showing how excellent this country's biggest wine region can be for growing great Chardonnay grapes.
This wine is certified organic and has a light touch of oak ageing which is nicely integrated into the wine's flavours and body to add depth and complexity while retaining lovely refreshing flavours and balance.

About Greystone
The Greystone wine story began in 2000 when the Thomas Family bought an old sheep farm on the Omihi hills in the Waipara Valley, North Canterbury. The rolling limestone hills lured this family in and their goal was a single minded one: to make great wines from the limestone rich soils here. Fast forward 20 years and Greystone is one of the great (and, some might say, yet to be fully discovered) wineries in this outstanding wine region. Not least due to the work of winemaker Dom Maxwell and general manager Nick Gill, who began working together in 2005 and has grown along with the brand and quality.
