From the Whisky Cellar
The heavy new-make style of Aultmore lends itself perfectly to Sherry cask maturation and here is whisky from this very distillery, distilled in October 2011 and bottled in August 2021, that spent its entire maturation in a first-fill Oloroso Sherry Butt made from American (not the typical Spanish) Oak.
Colour: Burnished Copper.
Nose: Creamy mocha, barley sugar, dark fruits and butterscotch.
Palate: Condensed milk, fresh roasted Arabica coffee beans, California raisins and peanut brittle.
Finish: Mouth-filling and sweet with a creaminess that lingers long.
Bottles: 739.

This Glen Elgin Single Malt Scotch Whisky is a classic Speysider with a fuller body than most and an inherently luscious fruit character. This is a rare Sauternes Cask finish, distilled in June 2008 and bottled in August 2021.
Colour: Bright Gold.
Nose: Intensely sweet honey covered yellow stone fruits with bold floral notes.
Palate: The sweetness of the Sauternes wine is carried well on the palate alongside a touch of aniseed, buttery bakes and dark honey.
Finish: Long and lip-smackingly sweet.
Bottles: 298.
Another bottling from Glen Moray where the refill American Oak maturation has allowed the light and delicate spirit to take centre-stage. This whisky was distilled in October 2005 and bottled in August 2021 having spent its 15 years in a single ex-bourbon Barrel.
Colour: Pale Gold.
Nose: Ripe green apples and vanilla custard tart. Some gentle spice in the background.
Palate: The sweetness of vanilla is the star, with some gentle fruits, delicate spice and vintage confectionary. Nothing overwhelms and the balance is superb.
Finish: Lingering sweet fruits ? apple strudel and cinnamon spice.
Bottles: 182.
Aged for 15 years in hand-picked oak barrels, this Speyside single malt Scotch whisky was distilled using peated malted barley at Tomintoul Distillery, giving that self-acknowledged 'Peaty Tang' uncommon in its region.
Bottled at a smooth 40% ABV, this release marks something of a follow up from this little beauty, only this edition has a declared age statement.
Another wonderful Tomintoul from the Vintage Single Cask range, this one was distilled back in 1994 and rested in a single Oloroso sherry butt! Eventually, it was bottled up at cask strength, with an outturn of 681 bottles at 57.4% ABV, packing oodles of dark fruit and toffee.
Nose: Toffee sweetness with hints of ripe damsons, plums and berries. Vanilla and custard aromas join the medley
Palate: Exotic mix of sweet toffee, raisins, plums, glacé cherries and nutty nougat
Finish: Sweet to start then drying slowly with cigar box spiciness
57.4% ABV
The folks at Tomintoul have raided the warehouse and unearthed a stunning 45 year old expression! This single malt was distilled back in April 1973 and initially aged in a bourbon barrel before being moved over to an Oloroso sherry hogshead to continue maturing. It was bottled in September 2018 with an outturn of just 240 bottles.
Nose: Clean Sherry influence on a sweet malty layer. Intense waxy aromas merge with hints of orange citrus and Christmas pudding.
Palate: Richly mouth-filling as notes of nuts, chocolate, mocha coffee bean and spicy oak tannins vie for supremacy.
Finish: Dry and spicy with a rich and enduring final?.
