TASTING NOTES
Perfect harmony and balance of aromas Aroma is everything for cognac. The character of each individual note is shaped by its terroir, grape, cask and years of maturation. This is why Courvoisier takes great care to nurture every possible aroma at every possible stage of the cognac-making process. In recognition of this quality Courvoisier is consistently awarded in numerous spirits competition (IWSC and San Francisco spirits competition) Jasmine The distillation on the lees is a complex and meticulous process but it gives our VSOP Fine Cognac fruity and musk notes, evoking jasmine aroma. Toasted Almond From our insistence on ageing in oak barrels. After several years in our French fine-grained oak barrels, the spirit develops nutty notes and ages to produce a sweet, caramelized flavor resembling that of toasted almonds. Peach Evolving from the meticulous selection of the best wines from cognac region which, when distilled and aged, begin to conjure the soft, luscious aroma of ripe peach.
An innovative eau-de-vie from Martell, which is made by finishing their acclaimed VSOP Cognac in Kentucky bourbon barrels. This finishing process adds rich aromatic tones to Martell's delicate, pure Cognac, layering the characteristic candied fruit and plum notes with vanilla and toasted oak. This eau-de-vie, which cannot be called Cognac as the latter must only be aged in French oak, commemorates the fact that Martell was the first Cognac house to ship barrels of its spirit to America.
With its fresh, marine notes, this is a perfect expression of the authentic style and qualities of Ile de R? Cognacs. The grapes have naturally higher iodine content than those harvested on the mainland. In addition, the island?s mild climate helps to bestow a truly individual character on the eaux-de-vie it produces.
Distilled on the lees to enhance the original flavors of the eaux-de-vie from which it is produced, Ile de R? Fine Island Cognac is then aged in an extremely damp cellar to add greater roundness, using lightly toasted oak barrels that provide an extremely delicate woody flavor
