The Alchemist is part chemistry and part wizardry; a fruit driven, new world cider that includes a small volume of intensely tannic Fuero Rous for structure.
A modest volume of fresh apple juice was added during blending to provide a freshness to the palate and nose.

The delicious cider is made from one of our most characterful apple varieties, Knotted Kernel harvested in 2023.
After pressing the juice went directly to barrel and was wild-fermented in the barrel to create this seriously bold cider with strong character.
Dry in style and fulsome on the nose. Bright and rich apple flavour with complex notes of caramel and hazelnut. Full bodied and textural with lovely tannins.

3.5% abv
This fabulous Ciderkin is dry, super refreshing and only 3.5% abv while still having loads of heritage apple flavour. In fact, we think the flavour is so good, you won't even notice this isn't a traditionally made cider!
Ciderkin is naturally lower in alcohol than our other ciders because it is made by soaking pressed apple skins which results in a much lower sugar content before fermentation. For this ciderkin we soaked the skins for 48 hours to extract as much flavour as possible. With much less sugar to ferment, we've end up with a really tasty drink with only 3.5% abv.
