After visiting Cobram Estate during olive harvest, Four Pillars realised olive oil could be a brilliant botanical alongside olive leaf. The aroma, flavour and texture of fresh olive is stunning, and they did a year of trials before finalising the recipe for this gin.
The botanicals include a big base of juniper with a savoury overlay of coriander seed, rosemary, olive leaf, olive oil, bay leaf, lemon myrtle, macadamia, orris root, and fresh lemon and grapefruit. Fresh ingredients were vapour infused while the others macerated in the pot.
They have used olive leaf and oil from the Picual, Hojiblanca and Coratina varieties. This gin is savoury, textural and bright. Perfect for any Martini - Gibson, dirty, or dry with a twist. For a longer drink try it in a Spanish-inspired gintonic, with rosemary and lemon.
The latest release from The Shed Distillery: an Irish gin with an exotic twist! This gin is distilled with more than 12 oriental botanicals, gunpowder tea, and a hint of Sardinian citrus--one of the rarest citrus fruits in the world found only on the island of Sardinia. The mix of botanicals and gunpowder tea gives this gin a uniquely fragrant, almost exotic aroma. Flavours are a delightful meld of orange and grapefruit, which leads to a mysterious finish. Best enjoyed in a smooth, refreshing cocktail or on its own with a generous wedge of fresh red grapefruit.

Hendrick?s is something of a household name. Perhaps you've heard of it? This terrific Scottish gin is made using two different stills - the Bennett stillsteeps its botanicals overnight before distillation, while the Carter-Head has its botanicals in a basket up in the still neck, steaming them gently. It features the likes of juniper, cubeb berries, elderflower, chamomile, angelica, lemon peel, orange peel, coriander, yarrow and orris, alongside an infusion of cucumber and rose petal. If you're making a G&T with this, it just has to be garnished with a ribbon of cucumber.
Nose: Big, creamy aromas right off the bat, with a little zesty citrus, juniper, rose petal jelly and cucumber.
Palate: Astoundingly fresh notes of cucumber with juniper, oak, a touch more citrus and vanilla. Creamy and savoury.
Finish: A long, refreshing, floral finish.
