A brand new addition to the Highland malt makers award-winning Principal Collection, the Sherry Cask Select showcases the affinity between The Dalmore and sherry. This expression begins its journey in American white oak ex-bourbon casks where it spends ten years maturing, laying down the foundations of the distillery's house style: chocolate, orange and spice. The liquid is then finished in an assemblage of hand-curated sherry barrels from Andalusia in Spain, making this 12-year-old a delicious and decadent drinking experience, full of sweet fruits and autumnal spice.
Nose: A nice combination of all things sherry: soaked raisins, milk chocolate and toffee, as well as brighter hints of raspberry jam, orange juice and subtle balsamic whiffs. Also mint and light nutty notes.Caramel sweetness, light tobacco, cinnamon pastry and chocolate cake. A little vanilla roundness. Herbal touches and baking spice. A hint of roasted coffee beans.
Finish: not too long, quite honeyed, with latte, more chocolate and gentle oak spice.
The Dalmore 15 year old was first launched in 2007. Matured in Matusalem, Apostoles and Amoroso Sherry casks, it proffers all those winter spice, orange zest and chocolate notes characteristic of Dalmore.
Nose: A chocolate orange. Potpourri, perfumed. Fruitcake, Sherry.
Palate: Medium, lovely delivery. Zesty orange, Cura?ao, chocolate. Winter spice, stem ginger in syrup. Hints of anise and a little hickory.
Finish: Malty barley and smoky espresso.
An indulgent smooth single malt matured in American white oak ex-bourbon casks and aged Tawny Port pipes. These casks were sourced from well-known port producer W&J Graham's
Nose: Clove-studded orange, raspberry and prune.
Palate: Chocolatey at first, before waves of dried fruit and stem ginger notes appear. A touch of earthy bitterness develops later on, balanced by runny honey.
Finish: Roast chestnuts, gingerbread and tobacco.
A 2020 release from Dalmore that takes a maximalist approach to cask finishing. Indeed, this dram is part of a mini series of three whiskies from the Highland distillery. Each expression in this series showcases Dalmore?s spirit in an increasing number of cask finishes, with the Trio being finished in three casks, the Quartet in four, and the Quintet in five. Dalmore Quintet has been finished in rare muscatel casks, Malmsey Madeira barrels, 30 year old matusalem sherry casks, 10 year old port casks and Cabernet Sauvignon casks from Bordeaux.

A captivating Single Malt assembled with 3 cask finishes: full, rich, with great charm. Bursting with ripe plums and berries with hints of sweet spices. Beautifully orchestrating the influences of first fill ex-bourbon, aged Tawny Port (10 years old) and exclusive Matusalem sherry cask (30 years old) finishes.
Nose: Orange peel/cointreau, some woody and herbal spices, touch floral, polished wood, barley malt, vanilla, dessert-like, chocolate orange creme brulee, cherry tart.
Taste: Medium-light bodied, silky, creamy vanilla, honey, light caramel, little spiced and spirity later, dry/powdered baking spices, cinnamon, mace, chilli heat, almost mentholic, orange sherbet and gingerbread.
Finish: Long, spiced. soft vanilla, black cherry and toffee.
At Dalwhinnie, clear worts and long ferments create a starting point form which one might expect a light floral whisky. However, the stills are run in such a way as to minimise the conversation between malt and copper, and when this is combined with the use of worm tubs to condense, the result is a heavy and somewhat sulphurous malt. After fifteen years in cask though, this is combined into the whisky, and the thick honeyed and almost sticky quality that Dalwhinnie is so famous for, shines through.
Nose: Aromatic, toffee, fruit salad, lush nectarine, custard. Floral, apple blossom, honeysuckle. Apple peels, pear, touch of smoke.
Palate: Malty. Walnuts steeped in manuka honey with vanilla sponge. Gentle smoke weaves its way through the cereal with a touch of spice.
Finish: Long, malty, walnut, almond.
Matured in a combination of refill hogsheads and butts for three decades, this Dalwhinnie single malt is an elegant addition to Diageo's 2019 Special Releases. Aromas of raisins, leather, lemon and cinnamon-baked apples mingle with mint, grape jelly, honeysuckle, spring meadows and hay. The palate offers notes of summer flowers, vanilla toffee, delicate oak spice and slices of apple and pear, followed by zesty lemon, candied flowers, Crystalised ginger and buttery shortbread biscuits.
This ultra-rare single vintage Dalwhinnie has an astonishing bright intensity for its age and comes uniquely from refill American oak hogsheads, all of which were casked in 1989. Three decades of maturity have bought a fine elegance to the vibrant distillery character, allowing its moorland aromas to peak. The result is smoothly sweet, yet also surprisingly peppery

Distilled in 2006 and bottled in 2021, this Dalwhinnie double-matured in ex-bodega Oloroso cask wood for a rich sweetness and spicy complexity to enhance the heathery, honeyed aromas and tastes of the regular release.
Dalwhinnie Winter's Gold is a 2015 addition to the Highland distillery's range inspired by the chilly climate up in the remote part of Scotland where their single malt Scotch whisky is distilled - as the label remarks, it was "Crafted by the Cold". It's made only with spirit that has been distilled between October and March, and interestingly enough, they suggest that you try serving this expression frozen!
