All the Pheasant?s Tears are fermented and aged in qvevri, a unique Georgian vessel used to ferment and store wine.
Qvevri were the first vessels ever to be used for wine fermentation, with archaeological finds dating back to 6000 BC. Qvevriare clay vessels lined with beeswax and completely buried under the ground where the temperature stays even throughout the year, allowing the wines to ferment in the natural coolness of the earth.
In accordance with Georgian traditional winemaking methods, the ripest of stems are added to the grape skins, juice and pits, for both our reds and our whites. The maceration time depends on varietal and the size of the qvevri and varies between 3 weeks and 6 months.
Since these wines are aged exclusively in qvevri, no flavors are imparted from oak barrels, allowing the quality of the grapes to shine through.

Polyphony or Poliphonia is a vineyard with 1-10 vines of each of the 417 varieties. This micro-vineyard is harvested in 3-4 sweeps, as the grapes all ripen at different times, so one ends up with white, golden greenish, blue, purple, grey-pink grapes at various level of ripeness that eventually finish co-fermenting together!
90% destemmed 10% whole bunch, everything is naturally fermented in buried qvevri, after a five-day maceration the must is pressed.

We endeavour to dispatch orders the next business day, couriers can take 1 to 2 business days to deliver to non-rural addresses and 2 to 3 days to deliver to rural addresses.
Exceptions during December:
In December, please allow 3 business days for delivery. The last day for Christmas orders is Monday 18th December at 5 am for all South Island and all rural deliveries, and the Tuesday19th December at 10am for North Island non-rural deliveries. After these dates Regional Wines cannot guarantee delivery before 25th December.
