Burgundy
The first traces of the Bichot family date back to 1214. They settled in Burgundy in 1350, in their fief of Ch?teauneuf-en-Auxois. The family's coat of arms has not changed since nor has its symbol, a doe (biche).
Alb?ric Bichot joined the company in the early 90s and took over its management in 1996. Though he fully respects family traditions, he is completely focused on the future.
Contrary to its name, ?Les Santenots? is not located in the village of Volnay, but in Meursault, just to the south. Though best known for its white wines, certain terroirs, such as Les Santenots, happen to be better adapted to bringing out all the finesse the Pinot Noir grape has to offer. Several hypotheses exist concerning the name of this locality: "Santenots" may come from the Latin SENTES "brambles, thorny bushes". It may also be derived, as was the name of the village of Santenay, from the Gaulish SENTU "way" (alluding to the roads that passed through there to link Auxey-Duresses with the Roman road). It could also refer to 2 ?ouvr?es? (=1/12 hectare) of vines in La Sautenot (that could have been located in the Les Santenots area), that the Abbess of the Tart Abbey gave to the Abbey of C?teaux in 1218.

The nose of this Volnay Premier Cru ?Les Santenots? is delicately smoky and oaky with spicy notes. Appealing fruitiness (cherry), enhanced by mild spices such as cinnamon. This charming wine boasts beautiful structure and remarkable full-bodiedness.

An excellent example of Chardonnay at its greatest from its classic home in Burgundy, north east France. This wine was made by David Moreau, a young winemaker based in Santenay, Cote de Beaune, Burgundy, whose five hectare vineyard was planted mostly by his grandfather in the 1960s. The vines are planted at the bottom of the slope of the Chassagne Montrachet side of Santenay where Moreau makes both white and red wines from Pinot Noir and Chardonnay with the aim of producing both great, age worthy wines as well as delicious wines to drink now that deliver succulence and richness of body.
One of the greatest domaines in Chablis. Founded by William Fevre in 1957, its vineyard holdings include 12 hectares of premier cru and 16 hectares of grand Cru vines. The domaines fruit is harvested by hand, a rarity in Chablis, and rigorously sorted at the winery to ensure the highest quality. In recent times the amount of new oak used has been cut back and today the average age of the barrels in the cellar is five years. From the Petit Chablis to the domaines six Grand Cru wines, the quality is superb and the range from Domaine William Fevre is a benchmark for the wines of the region.
Sea Chablis is evocative by name and by nature... a deliciously refreshing citrusy expression of Chardonnay from its northernmost outpost, Chablis, in north east France. It's made by one of our favourite producers, William Fevre, whose wines are impeccably well balanced.
The name Sea refers to the oyster shells embedded in the region's famous Kimmeridgian soils, which are home to left over fossils.
Domaine William Fevre has led the Chablis revival over the past decade with its refined, full bodied, dry white wines, all 100% Chardonnay, of course, as this appellation is devoted entirely and solely to this great white grape variety.

Moissenet-Bonnard's Pommard is a bold, powerful Pinot Noir with ripe depths of fruit and earthy flavours; a jewel-in-the-rough, says the winemaker, which needs time to refine its edgy flavours. A deep crimson colour leads into a nose with aromas of fresh fruit jam; cherries, strawberries and raspberries and a touch of freshly crushed forrest leaves. Big ripe tannins are part of the structural power in this wine, which drinks well now and has a decade of life ahead.
