Commercial Description
Le Champ - French for bubble. A delicious bottle fermented Methode Sparkling, this latest (limited) release is from Gisborne grown Chardonnay. The single vineyard Blanc de Blancs is from the Ormond Valley. Handpicked and whole bunch pressed, with only 550 litres per tonne extraction it has been bottle fermented and stored in this bottle for 14 years prior to riddling in batches late 2022 and 2023. The wine has been re sealed under crown cap to remove the cork influence and deliver the pureness of Methode Champenoise aging. Dosage is 10 G/L
This wine possesses a very fine bubble, yeast derived savoury aromas and flavours, with a creaminess and freshness. With touches of lemon and mushroom on the palate, the off dry sweetness is balanced with acidity.
We are delighted to bring this wine to market. Purposefully under stated on the label we hope you agree the wine talks for itself. The creamy mousse is perfect as a lunch time refresher or aperitif to enjoy with canapes, tapas, and antipasto. Best served chilled in a tall glass
Colour: Light lime pale in colour with a fine creamy bubble.
Aromas: Burnt Citrus and peachy stone fruit mushroom and fresh baked bread
Palate: Off dry, fresh, and clean flavours of lemon and nectarine. A tantalising lingering palate cleansing finish.

Tempranillo is the king and queen of Spanish grape varieties with over 206,000 hectares in that country?s entire vineyard area, making it the most planted red grape variety and the second most overall after the little known white Spanish grape called Airen.
This tasty and super affordable, dry Spanish red is made from organically certified vineyards in Ucl?s in Castile, Spain, where the vines are grown as part of an integrated ecosystem, along with old oak trees. This region's continental climate provides hot sunny days and cool nights, which provide favourable ripening conditions for the Tempranillo grape.
The grapes in this wine are harvested in the cool of night and early morning, given a light crush and fermented in stainless steel to preserve fruit freshness. Maceration is typically eight to 10 days and no oak is used in the winemaking, so the fruit is hero in this smooth, medium bodied red.
The name Tempranillo comes from the Spanish word temprano, which means early. It?s apt. Tempranillo is an early grape to bud in spring and it ripens early in autumn. Along with its big bunches of small, thick skinned grapes and relatively big yields (that?s means it provides a lot of grapes to harvest and make wine from), it?s a successful grape to grow. As for the taste, Tempranillo?s character tends to be soft, smooth, bright and fruity. What?s not to love? There?s
On the nose pungent, rich tropical blackcurrant bud and passionfruit aromas combine with notes of green nettle and oyster shell. The palate is generous and intense with concentrated flavours of white peach, passionfruit and fresh grapefruit. A slight herbal edge and salty minerality leads to a long lingering finish.
With predominantly local hops and slightly above-average alcohol content, our Red IPA has the same confidence and individuality that characterise our own former colony. Tantalising passionfruit aromas give way to a delightful and unexpected combination of berries, tart ruby grapefruit and a comforting toasty malt on the palate, rounded off with a satisfying, sustained finish.

Parrot Dog - Our troublesome original release, named for the problematic first brew day which hugely emphasised its hop bitterness. It’s matured and evolved nicely over the years, with us. Big tropical hop flavour from local varieties with strong bitterness from an English hop to honour its origins, all balanced by plenty of malt.
