What we have here is a passion project, many years in the making.
We wanted to put our own, beer-inspired mark on our whisky. So instead of making a wash from pale distillers malt, we started with what can best be described as a porter. Dark, chocolatey and malty, fermented with a Belgian saison yeast. After distilling this twice, we aged it in three different barrels:
First it spent a year in barrels that held our famed Imperial Stout, Bumaye.
Then it went into brand new, heavily charred American Oak barrels for two years.
Finally it spent three more years in Bourbon barrels that also held another Imperial Stout.
The finished result is a whisky that is rich and complex. Full of sweet, chocolatey notes from the barley and the stout barrels, layered with complex alcohols, esters and phenols from the fermentation and distilling. This is all rounded off by vanilla, coconut and caramel flavours from the oak.
56% ABV.
Bottled at seven years and one day, this decadently rich Full Flight bottling is double sherry. The spirit was matured in a González Byass Oloroso Sherry Butt, then transferred to a Pedro Ximénez Butt for a decadent finish. Buttered hot cross buns, laden with spice and sticky raisin, piled with a side of sun-scorched nectarine and a drizzle of Cardrona's signature borage flower honey.

Black Snake is produced from a Vatting of casks finished in a Single Butt. It starts its life in first-fill ex-Bourbon casks. We then put three of them into new Oloroso or PX butts and leave for around a year for further maturation before bottling two thirds of the cask. We call these ?Vats? as they are a kind of mini Solera. After each bottling we add two more ex-Bourbon casks, always of the same whisky, and leave for around another year before again bottling two thirds of the Vat. All future bottlings from each vatting of Black Snake will therefore contain some spirit that was in previous expressions from the Butt. From time to time the Butt is renewed. Each edition bottling of Black Snake is called ?Venom?, as in a snake?s poison. A touch of Blackadder humour! The first bottling from each Vat is called ?First Venom?, the second ?Second Venom? and so on.

The John Walker & Sons Celebratory Blend is inspired by a breakthrough moment, the release of Old Highland Whisky in the 1860s, which was created primarily for export and became the first of our whiskies to travel from Scotland to the four corners of the world. With more whisky being sold overseas, the iconic design of the square bottle and uniquely slanted label were distinct and helped the name stand out against other whiskies. John Walker & Sons Celebratory Blend is a sensorial journey featuring notes of sweet dried raisins, subtle spice and marzipan, which develop into hints of roasted nuts, icing sugar sweetness and gentle peat, with a soft pepper finish. It celebrates an historic moment in our story.
Whisky is full of life. Scotland especially is home to many different species of spirit, from heavy to light, fruity to smoky, and pungent to ethereal. Certain whiskies taste that little bit wilder than others, and we have brought together some of these strange and beautiful creatures to create our Menagerie. We have focused on parcels of malt whisky that in addition to their fruity or spicy charms have something animalic about them just beneath the surface. This is a whisky of mossy woods as opposed to floral meadows; Menagerie is what you put into the hipflask ahead of a Tuscan truffle hunt.
Building on chocolatey and meaty malt whisky from the Mortlach Distillery, we have added whiskies of a citrusy and earthy nature from the Deanston Distillery. Our Highland Malt Blend ? aged for a number of years in custom French oak barrels ? lends a brooding spiciness, while malt whiskies from the Glen Elgin and Laphroaig distilleries bring musky tropical fruit and tarry smoke, respectively.
A sumptuous malt whisky blend, showcasing whiskies aged in Spanish wine casks. The name is a nod to our founders chance encounter with a man in the South of Spain, where he was introduced to Sherry for the first time. Years later, John was reacquainted with Sherry through whiskies aged in former Sherry casks, known for the rich, deep flavours they provide. It's a style of whisky John has been drawn to ever since.
This whisky, like all vatted malts, is made by marrying 100% single malt whiskies from different distilleries. Compass Box Peat Monster includes in its blend single malts from lead distilleries Ardmore and Caol ila. Both components are aged between 10 to 15 years. Pale golden color. Sweet clover honey, heather, and peat aromas. A soft, yet rich, entry leads to a sweetish medium-full body with caramel, orange peel, raw honey, toast, vibrant peat and pepper flavors. Finishes with a honeycomb, iodine, and toasty grain fade. Very drinkable, exquisitely balanced, and approachable with vibrant, but (despite the name) not dominant peatiness.
An interesting view of a typically heavier Speyside dram, this expression from Benromach has been triple distilled, a style very rarely seen in Scotch Whisky. Matured entirely in ex-bourbon casks filled in 2011, the nose offers a basket of tropical fruits, with fresh vanilla pods and baked biscuits. The palate brings a trip to the orchard, with ripe green apples and pears in the spotlight, backed by touches of banana and clover honey. Soft smoke and citrus leave you wanting more...
The first certified organic Single Malt Scotch whisky since 2006, this is the latest of Benromach's acclaimed 'Contrasts: Organic' series. Distilled in 2013 this follows previous releases unpeated spirit, matured in virgin-American oak. Offering an aromatic and sweet fragrant oaky note, rich with vanilla and toffees, the nose is creamy and malty as well. The mouthfeel is creamy again with banana custard, moving to coffee and cocoa flavours. Fully accredited by the UK Soil Association, this is a rare example of totally organic Single Malt Scotch Whisky.
Part of the Secret Speyside Collection, this sumptuous single-malt whisky has been maturing for three decades. Braes of Glenlivet is exactly the kind of distillery that the series was made to showcase: underappreciated and sublime. This expression demonstrates its qualities nicely!
