Australian Beer
Farmhouse style ale aged in wine barrels for 15 months with a Brettanomyces yeast strain that produces fruity esters. Following barrel aging, we racked the beer onto fresh yellow peaches and nectarines. A dry, bitter beer with fruity and spicy yeast character supplemented by subtle peach and nectarine notes.

While Brettanomyces (?Brett?) yeast is known for producing the funky flavours and aromas in wild ales, it was actually first isolated from British stock ales, hence its name meaning ?British Fungus? in Greek. It is believed that Brett living within the wooden barrels used to age these stock ales gave them their distinctive complexity and smoothness. Taking Stock was aged in oak barrels for eight months with the specific Brett strain that was originally isolated from these stock ales.

Weissbier (wheat beer) originated in Bavaria in the 16th century. At the time, the ruling dynasty controlled production, only giving a privileged few the right to brew wheat beer (Weissbierregal). Regal Authority is our rendition of an original 16th century Weissbier. We fermented it in wooden barrels for 4 months and like most beers of that historical era, it is naturally sour due to the microflora living within the wood.

Old Ale is a strong, dark and malty British beer style that, as the name suggests, is aged for long periods of time. Like historic versions, Not Too Heys was aged in oak barrels with Brettanomyces. Mahogany in colour with nutty, plum, caramel, wood and leather notes. Nicely balanced between the moderate sweetness, substantial bitterness and light acidity.

Doppelbocks are a strong, rich and malty lager originally brewed by Bavarian monks in the 17th century. Designed to sustain the monks while they abstain from solid foods during the 40 day Lent period, doppelbocks earned the nickname ?Liquid Bread?. Disclaimer: We do not condone 40 day beer-only diets.

Bear Hug is an Oud Bruin style sour, otherwise known as a Flanders Brown. It was aged for 16 months in oak barrels, before being can conditioned for a further 5 months. This long aging period allows the Pediococcus bacteria to develop the desired sourness and also results in the malt profile acquiring some sweet sherry like flavors. A complex blend of dark malts and fruity esters, with balanced sweetness and sourness.

Morning Light is a golden sour fermented and aged in wine barrels with Belgian Saison yeast, Brettanomyces and Lactobacillus. Fermenting directly in the four barrels gave the microflora living in the oak greater opportunity to develop unique characters. Morning Light was aged in barrels for 18 months and can conditioned a further 3 months before release.

Ready or Not is a contemporary India Pale Ale made on a foundation of premium NZ malted barley, oats, and spelt. We've then double-dry hopped it with a hearty combo of Citra?, Idaho 7, and Peacharine - a captivating new variety grown by Freestyle Hops? that we are just in love with here at One Drop. Expect a juicy and tropical fruit-forward IPA with a pronounced hop character and soft finish.

Amigo is a sorbet-style sour ale we?ve wanted to make for a long time here at One Drop. With summer closing in we wanted to pay homage to the days of late, where sunshine is king and good times are had all around. What better tribute than an obtusely loaded up kettle-sour with drums of passionfruit, apricot, and peach puree sitting shotgun with coconut water and sorbet powder? Here?s to salud and sunshine!

Combining forces, noggins, and brewhouses with our pals Fox Friday, we?ve gone and loaded this sud tube up with the freshest Simcoe?, Citra Cryo?, and hand-selected Motueka we could get our paws on. One recipe with 2 breweries expressing it in their own unique way. A big, pale, hazy juice bomb? That?s Us. A wickedly smooth hop-driven crispy ale? That?s Them.

In Too Deep is a new topped-up-to-the-brim kettle sour that's been given our full Fresh-Fruit Smoothie Treatment. Starting with a lactose and oat heavy base soured with our house lacto culture, we?ve then gone and dropped some serious cannon-balls of strawberry, banana, tangerine, marshmallow and a touch of sweet French vanilla. Come get deep and join us as we go overboard.
Swing Low is an absurd unit of a pastry sour fresh out of our pilot program. Brewed with date syrup and Lactose, we?ve then fermented low-and-slow on a bunch of delicious banana and white chocolate. To round out this god-tier combo, we?ve gone and added fresh coconut creme and a touch of natural bourbon vanilla extract at canning for that decadent Easter touch. Swing low champions, glory awaits.

Topdown is a brand new NEIPA with a base of NZ malted barley, oats, and spelt then double-dry hopped with Eggers Farm Riwaka, Citra-Cryo?, and YQH-1320 (Elani?)? A trial hop out Yakima Quality Hops in the US that highlights a sweet-fruit and citrus character. With the top down this summer, expect a citrus-forward IPA with a pronounced hop character and a slightly drier but quenching finish.

New Coopers Australian Lager, refreshing from first drop to last. With a bright golden hue originating from Coopers? own lager malt, the beer pours clean and clear. Our easy-drinking modern Australian Lager features stone fruit and citrus aromas, with a dash of late hopping adding subtle tropical notes. A slow fermentation using traditional lager yeast creates delicate floral notes on the palate. Finally an authentic Australian Lager that pairs well with a barbie on a sunny day.
