Australian Beer
A special release sour with a fresh and juicy dose of Aussie Mango. A traditional Berliner Weisse base, heavy in malted wheat and barley, along with a novel blend of 2 different bacteria, a unique yeast strain, and a West Scandinavian Kveik. Expect gentle fruit and tropical tartness backed up with a sweet, full, fresh mango pulp finish.

Slicker than Average is a brand new caramelized Cr?me Brul?e Sour with Banana added right at the end. Upon a base of wheat, toffee, and roasted malts, we've dosed our house lacto blend alongside vanilla, brown sugar, and custard powder. While you may be expecting a mix of sweet and tart, a big dose of creamy banana thickens, softens, and rounds off this slicker than average drinking experience.

Bone Man is a brand-new New England IPA with a focus on experimentation. Dry hopped with 2 new-to-market hops and one classic - Ahhhroma? from Glacier Hops Ranch, Experimental YQH-1320 from Yakima Quality Hops, and Mid Harvest Motueka from Freestyle. We've used this triplet in an experimental Intra-Conical Dry-Hop regime courtesy of the folks at Tired Hands Brewing, Pennsylvania. The process refers to exclusively dry-hopping the beer in its conical fermenter, without adding any hops to the brew kettle or whirlpool, aiming to enhance the beer's floral and intense hop character while keeping bitterness at a minimum.

Hit Me Up is a new DIPA with a new ingredient we've been loving of late - Phantasm - made from NZ Sav Blanc grape skins that are rich in thiol precursors. Mash hopped with NZ cascade on a base of oats, wheat, and spelt we?ve gone and then Double Dry Hopped with fresh Freestyle Nelson Sauvin, Motueka, and Citra with a post fermentation double-dose of Nelson Sauvin SubZero Hop Kief?.

Ranniku [ The Coast ] - influences of the Australian coast collide with a tenebrous affinity from the P?hjala [ Northern Realm ]. Born is a massive dark collaboration of beer & friendship with our pals P?hjala, Estonia.
Working closely with Head Brewer Martin, we adapted a huge dark base of theirs for the antipodean malts we use while also drawing inspiration from coastal Australia. After an 8-hour boil, robust hopping, and cold fermentation, an extensive bittering on the hot side gives this massive Nordic Stout something massive. A rich foundation of strong malty and heavily roasted character is complemented, and amplified, by additions of North Queensland vanilla and toasted coconut, NSW cinnamon myrtle, and Tasmanian Oak.
Once again, as the Solstice passes, a rich and meticulous stout emerges.

Hard & Done is an ultra-modern DIPA using the latest ?23 batch of Phantasm? along with fresh 2023 crop flown direct from the Freestyle hop farm in NZ of Southern Cross?, Freestyle Nelson Sauvin?, and Motueka? hops. In combination with a thiol-active yeast strain, Hard & Done was spun through a very short Clean Fusion dry-hop contact time alongside SubZero Hop Kief? of those respective hops from Freestyle. The result is very hop-driven character balanced and intertwined with a potent thiol expression ? a post-modern take of the IPA.

When the first regular breweries were founded in the Middle Ages, beer filtration was not a common technology and few mastered it. Among these few were the Fathers of Grimbergen Abbey, who became renowned experts in craft brewing.
Their masterpiece was the filtrated Grimbergen Blonde – a pure, smooth, blonde ale with ripe fruit flavours and no cloudiness – that stood out from other beers of the time. Today, it’s still an insider tip among beer connoisseurs around the world.
