A 2020 release from Dalmore that takes a maximalist approach to cask finishing. Indeed, this dram is part of a mini series of three whiskies from the Highland distillery. Each expression in this series showcases Dalmore?s spirit in an increasing number of cask finishes, with the Trio being finished in three casks, the Quartet in four, and the Quintet in five. Dalmore Quintet has been finished in rare muscatel casks, Malmsey Madeira barrels, 30 year old matusalem sherry casks, 10 year old port casks and Cabernet Sauvignon casks from Bordeaux.

Opened in 1825, just one year after distilling on a large scale was legalised, the Glencadam Distillery continues to produce its rather delicate Single Malt Scotch Whisky in the same fashion it did in 1825.
Colour: Straw Gold
Nose: Lively, intense. Grassy freshness and citrus tones with hints of spicy oak.
Palate: Rounded elegance. Clean crisp citrus tones. A pleasing harmony between a natural sweetness and the soft spicy oak.
Finish: Long and soothing. Rich, clean barley and gristy sweetness.
The Glencadam 10 year old won the award for Best Highland Single Malt Whisky 12 years and under at the World Whiskies Awards in 2009.
Stunning complex single malt from the awesome Aberlour Distillery, one of the smallest in Scotland's prolific Speyside region. This expression has enjoyed its maturation in a combination of Oloroso sherry casks and first-fill American oak casks. Dig in to all those fruity, spicy sherried notes that you're familiar with from Aberlour, paired with decadent helpings of rich, creamy vanilla. Highly ideal for somewhat chilly evenings, this one.
Nose: Big aromatics on this one with cloves, cardamom and camphor, and then comes a wave of sweeter notes like toffee, milk chocolate and orange rind.
Palate: Full texture, round and creamy, with sweet dark cherries, fudge, and mocha coffee with a refreshing minty breeze.
Finish: Quite long with lingering honey and wood spice.
A no age statement release from Glencadam named after the year in which the distillery was founded. It's matured in bourbon barrels before spending a finishing period in Oloroso Sherry butts.
Nose: Mixed fruit - red fruit from the Sherry casks and tropical from the American oak - with creamy Glencadam character.
Palate: Sweet winter spice, vanilla, malt, cooked fruits and fruit salad.
Finish: Sweet and fruity.
Completely unpeated (unusual in the highlands), this Glengoyne is soft, fruity and very quaffable. A fine single malt!
Nose: Toffee apples, a little acacia honey, nectarine in syrup and spice, supported by toasted barley in the background.
Palate: Over-ripe grapes, honeyed with hints of vanilla, coconut milk and oak spice. Light touches of chocolate ice-cream.
Finish: Long, oily finish with lingering coffee notes.
Released in 2013, this fabulous bottling from Tullibardine sees the rich, malty whisky finished for 12 months in top-quality 500-litre sherry butts. The result is something to behold.
Nose: Spiced, aromatic nose with notes of dark brown sugar and toffee apples.
Palate: Cooked fruit, cinnamon and manuka honey. Dates and hints of allspice.
Finish: Long, creamy finish with butterscotch and ground almonds.
Another stellar addition to the Double Cask range from Macallan, it's a 15 Year Old expression! The single malt spent its years in a combination of American and European oak, both of which were seasoned with Oloroso sherry. What did you expect from Macallan? A wonderful balance of creamy sweetness and fiery spice to be found in this one.
Nose: Butterscotch and plump raisin, with spiced apple crumble and oak spice.
Palate: Dried fruits galore, with a dusting of cinnamon, candied ginger and orange peel.
Finish: More warming ginger alongside a drizzle of honey and buttery caramel.
Macallan's Triple Cask range was launched in 2018, taking the place of the Fine Oak range. This is the entry level expression from the series, matured for 12 years and drawn from a combination of European sherry seasoned casks, American sherry seasoned casks and American ex-bourbon casks.
Nose: Gingerbread, vanilla essence, wafts of buttered toast and clotted-cream-topped scones.
Palate: Raisins, sultanas and stem ginger. Citrus begins to develop on the palate, with a touch of dark chocolate.
Finish: Subtle cedar and honey linger on the palate.
This Caledonia Edradour is a release specially selected by songwriter Douglas Maclean and named after his famous song, Caledonia. The cask was an Oloroso sherry cask, distilled in 1997.
Nose: Sweet, creamy and honeyed, with notes of Manuka honey, hints of dried fig and date, soft sherry and a hint of oak.
Palate: Full and rich with notes of berry fruits, and honey and butter on granary toast. More sherry, caramel and toasted almond.
Finish: Spicy, dry and sprinkled with a dusting of cocoa.
The third release in Wolfburn's Kylver series features the runic symbol Thurs, which roughly translates as thorn or giant. This is one of the runic symbol found on the Kylver stone which the series is named after. this limited-edition Highland single malt has been matured in a combination of bourbon and sherry casks, creating aromas of vanilla, angelica root, waxy fruit and charred oak on the nose.
