It's the very first release of Drumshanbo Single Pot Still Irish whiskey, produced by The Shed Distillery! Made with a combination of malted Irish barley, unmalted Irish barley and Irish Barra oats, this one is triple distilled and matured in a combo of Oloroso sherry casks and Kentucky bourbon casks. An impressive expression from the excellent distillers (their Drumshanbo Gunpowder Gin is favourite among many), and it's said to be the first whiskey to come from Connaught in over 100 years.
Nose: Vanilla heavy, with grassy malt and honeyed porridge. A slow build of spiced fruit compote and chocolate mousse.
Palate: Christmas cake, buttered rye bread, red chilli flake, milk chocolate again and some flamed orange peel brightness.
Finish: Raisin, hazelnut spread, drying spices.

A 12 Year Old Single Pot Still Irish Whiskey. Rather than being simply a finished whiskey, Yellow Spot contains whiskey matured for a full 12 year period in three oak cask types: American bourbon barrels, Spanish sherry butts, and uniquely, Spanish Malaga casks. The influence of the Malaga cask brings an exotic sweet note to the whiskey.
St Kevin, the man on our bottle, stood apart. This whiskey does the same. It has sucked the marrow out of two casks. An American Bourbon barrel gives sweet, toasted vanilla notes. A Spanish Oloroso Sherry barrels adds hints of dark, dried fruit and a slight nuttiness. Non-chill-filtered for a truer character.
