Imagine a velvet smooth red with a full body and a light touch with a silky palate. Here it is in Ochota Barrels Syrah. Flavours of black olive and fresh earth meet ripe red plums in this wine, made from grapes grown on the Onkaparinga Hills vineyard, planted on schist and clay in 1996. 

Certified organic and dry grown grapes were given whole bunch wild yeast fermentation with 80% short gentle macerations and hand plunging along with 20% extended carbonic maceration. The wine was pressed straight to seasoned French oak for 94 days. It was bottled unfined and unfiltered.

Two parcels of Scottish barley distilled spirit have matured for a minimum of six years in ex-American oak casks before being transferred to red wine casks from the Gironde left bank, north of Bordeaux. Bottled at 56.1% ABV, this spirit showcases stunning spice and fruit notes. It is a rich and elegant, undeniably Islay single malt.

Nose ? Lots of fresh fruit aromas mingle with the dry peat smoke; from the oak comes spices, along with chocolate, toasted malt with toffee, brown sugar and delicate coconut and vanilla notes. As you nose again, the fruit notes of both the spirit and the wood come together. The earthy peat smoke wraps around the fruit and spice and holds everything together, highlighting the wonderful marine and ozone notes that breeze through the dram.

Palate ? A wave of flavours sweep across the palate, the sweetness from the oak and malt lead, followed by the smoke, citrus and dried fruit notes. Another sip helps you find the oak notes, the dried fruit, marzipan and spice. Caramel and chocolate notes emerge alongside the peat smoke with its earthy richness. A little water opens the citrus fruit and marine elements and brings out a little more of the coconut and vanilla notes from the oak. The structure on the palate is firm and round and balances the depth of flavour of this whisky.

Finish ? The peat smoke comes through on the finish with a more medicinal phenol style. Coconut and floral notes waver, and a saline marine element combines with the earthy smoke in the classic Port Charlotte style. The oak?s softness and the minerality of the spirit become wrapped in smoke, a familiar signature to this dram.

56.1% ABV

Using a blend of US and NZ hops this Hazy Pale Ale is light-bodied with a delicate malt base. A soft bitterness with a refreshing lime and citrus nose. 

5.5% ABV

Brewed with the respect a traditional style deserves, this Irish style dry stout pours pitch black topped with a rocky cream coloured head. Hold it up to the light to see beautiful ruby highlights and bring it to your nose for the full roasted character to shine through. Notes of fresh coffee, dark chocolate and a hint of earthiness come forward through the palette. Then, it brings a finish as dry as the Irish sense of humour!

4.5% ABV.

An actual pilsner in the style of crafty old Josef Groll, who stole lager yeast from his native Bavaria in 1842 to make his signature style famous in Czechoslovakia and then the world. It’s therefore fitting that we blatantly stole his recipe to make a cheeky New Zealand pilsner without having to spend ages coming up with a recipe of our own. 5.2% Alc/Vol

Sherries like this one that are aged over 30 years use the acronym V.O.R.S., which stands for "Vinum Optimum Rare Signatum".

Del Duque shows a dark golden colour due to the extended time spent in cask. On the nose there are bright aromas and walnut notes from the time spend under flor, plus dried fruits, roasted hazelnuts, antique furniture and polished leather from the oxidative ageing.

100% Syrah from the Gimblett Gravels. 2013 was a stunning vintage and this beauty is now hitting its straps with deep black fruits and oak notes combining with tertiary aged complexity.

They took two strains of German Ale Yeast that are usually used to make the Kolsch style ( a light, slightly fruit pale beer, quite similar to German pale lagers) and gave the beer a bit of Boneface treatment! resulting in a soft, fruity beer.

This is a light and dry Sauvignon Blanc from New Zealand's biggest wine region and its flavours are fresh, crisp and taste of green apple and pear with a lingering finish. This is very good value for money.

This beer started out as two separate barrels that we filled in 2018. Three years later we blended the two barrels together before separating the blend out into two different finishing barrels. This part of the blend was finished in a freshly emptied port barrel with 250g/L sour cherries and raspberries.

7.6% ABV

McLaren Vale Grenache is a juicy little number with spicy deliciousness and packed with red berry flavours, floral appeal and firm tannins adding a structured framework around all the lovely lush plush fruit flavours. One of South Australia's most delicious red wines and even better, having been fermented with 28% whole bunches in the fermentation which adds structure and lift. 

Ox Hardy brand is the brainchild of founder Andrew Hardy, whose nickname is Ox and whose great great grandfather was Thomas Hardy; the father of the South Australian wine industry.

Superb concentration of honeyed texture and crisp piercing lemon curd acidity which both come through in a wine of fabulous intensity, structure and concentration. 

This superb sweet wine drinks beautifully now but it can age for the long haul in a cool dark cellar. It makes a gorgeous match with lemon tart or with goat's cheese. 

Mojave Green, stone-cold classic California IPA. Bright, crisp, clean, cold-conditioned golden malt base, tenacious foam and mouth watering bitterness, layered with earthy, spicy citrus and a heavy hint of grapefruit sativa. It?s a dark desert highway trip to the dank heart of hoppiness.
